Zeleninové kari s cizrnou
Ingredients:
- 2 tbs vegetable oil (olive)
- Half onion – finely chopped
- 3 cloves garlic – pressed
- Small potato – diced
- 2 carrots – sliced
- Can of chickpeas – drained and washed
- Water
- Cup of white wine
- 1 tsp curry
- 4 dashes black pepper
- 1 tsp salt
- Half cup rice
Directions:
- Fry diced onion in a medium-hot pot in some olive oil.
- Add garlic.
- Add the chickpeas, carrots, and potato.
- Add the water and white wine; allow to boil.
- Add the curry, salt and black pepper.
- Rinse the rice, and add it to the boiling mixture.
- Allow the mixture to come to a boil for about 5 minutes.
- Cover and simmer for about half an hour until done to your taste.
